Diazyme X4 is used in brewing and potable alcohol production, these enzymes hydrolyse starch into fermentable sugars, mainly glucose and are essential for highly attenuated beer.
Diazyme X4 improves and controls attenuation and production of low carbohydrate beers. It is recommended to be added in the mash at mashing in or right after mashing in.
For potable alcohol production, Diazyme X4 should be added at temperatures below 70C at saccharification for complete saccharification or in the fermenter.
