S02 tablets have several important purposes, including: 1. Sanitisation: SO2 is an effective antimicrobial agent, which helps to inhibit the growth of unwanted microorganisms (such as bacteria and wild yeasts) in the brewing process. This is particularly important during the primary fermentation phase and before packaging. When diluted in water, metabisulphite releases SO2 gas, which can be used for sanitising equipment and containers. 2. Antioxidant Properties: Sulphur dioxide acts as an antioxidant, protecting the beer from oxidation during fermentation and storage. This helps preserve the freshness and stability of the beer, reducing risks of off flavours that can result from oxidative reactions. 3. Stabilisation of Must: In winemaking, sulphur dioxide is also commonly used to stabilise grape must before fermentation. In brewing, some brewers may apply it similarly to stop spoilage and preserve the quality of ingredients. 4. Adjusting Sulphite Levels: Some brewers also use SO2 to adjust the levels of sulphites in their products. The presence of sulphites can contribute to the complexity of flavour and aroma in fermented beverages. When using SO2 tablets, brewers must be careful with dosage, as excessive amounts can impart harsh flavours and even lead to off flavours or spoilage in the final product. It's also important to monitor the levels of SO2 throughout the brewing process, especially if the beer is to be aged or stored for extended periods. Generally, it's recommended to use SO2 within guidelines in the TDS and SDS for optimal results.
