Stimula Chardonnay is added at the end of the yeast growth phase (approximately 1/3 sugar depletion). At this time the yeast is no longer utilising amino acids as a nitrogen source for growth, but they are using them to produce esters along with naturally occurring riboflavin, biotin, vitamin B6 complexes, sterols, manganese and zinc. These desirable compounds are recognised as being fruity and floral in nature. By using Stimula Chardonnay you are optimising the aromatic potential of your white and rose wines.
